Tomato Paste Production Process Tomato paste is a concentrated product made from ripe tomatoes, widely used in cooking for its rich flavor and deep red color. The production process involves several key steps to ensure quality, consistency, and shelf stability. 1. Selection and Washing The process begins with the careful selection of ripe, high-quality tomatoes. Damaged or unripe fruits are removed to maintain flavor and color. The selected tomatoes are thoroughly washed to remove dirt, debris, and any residual pesticides. 2. Crushing and Preheating The cleaned tomatoes are crushed into a pulp using mechanical crushers or grinders. Seeds and skins may be partially removed, though some processes retain them for added texture. The crushed pulp is then preheated to about 60–70°C (140–160°F) to inactivate enzymes that could degrade quality. 3. Pulp Finishing and Sieving The heated pulp is passed through a finisher or sieve to remove seeds, skins, and fibrous materials, resulting in a smooth puree. This step ensures a uniform consistency in the final product. 4. Evaporation and Concentration The tomato puree is transferred to an evaporator, where it is concentrated under vacuum at controlled temperatures (typically 60–80°C or 140–175°F). This removes excess water, increasing the solids content from around 5–7% in raw tomatoes to 24–36% in tomato paste. Some high-concentration pastes reach up to 40% solids. 5. Sterilization and Packaging The concentrated paste is sterilized by rapidly heating it to 90–100°C (194–212°F) to kill microorganisms, ensuring safety and extending shelf life. It is then hot-filled into sterile containers such as cans, drums, or aseptic bags to prevent contamination. 6. Cooling and Storage After sealing, the containers are cooled to room temperature. The final product is stored in a cool, dry place or refrigerated, depending on packaging type. Quality Control Throughout production, parameters like acidity (pH), Brix level (sugar content), color, and viscosity are monitored to meet industry standards. Tomato paste production combines traditional and modern techniques to deliver a versatile, long-lasting ingredient used in sauces, soups, and stews worldwide.
